Extra Creamy Mac and Cheese

The only place I can find really creamy mac and cheese with out added stuff like peas and/or beacon, is at the hospital and also at those 'eat all you want,' eateries.

I tried to make it going by taste but can not come close to what I want so badly.

I've gone through Betty Crocker, recipe books, and scads of recipe's on net.

Does anyone have a good recipe for plain old creamy mac and cheese?

If you mean macaroni and cheese, I can't help lass, because I don't like pasta. There'll definitely be somebody who will help out though.

No lass, I don't like pasta in any shape or form. Mayhap noodles from time to time, but other than that, no. There are lots of cooks on here who I'm sure will give you a few tips though.

Pasta is just flour and water, and we used to paste our wallpaper with that back in the 50s.

Re: Extra Creamy Mac and Cheese

Oh now then, I love macaroni cheese and the way I make it is:-

Firstly, sorry, no measurements:-

Melt butter in saucepan, add flour to make a roux, then add milk gradually until the desired thickness is reached. I then add a little mustard, salt & pepper to the sauce and some of the grated cheese.

When macaroni is cooked, pour into dish followed by the sauce and mix together, followed by the grated cheese. You can add sliced tomatoes on top, if you wish. Then in the oven or grill until top is nice and crispy.

I use the same method/ingredients as Carmen the english mustard is an important addition to give it 'bite'.
I would say a good quality strong cheese is important too.

I use cheddar in the sauce, but then crumble in a little blue cheese such as stilton to give the sauce a nice tang...yum yum...
