I don't understand ?

Water finds its own level yet the world is claimed to be round. So why doesn't water slide off this planet

Er, water does find it's own level.

Fluids used in spirit levels are more viscous, so less likely to "wobble" around when moved around a bit.

Many other things wobble when moved around a bit as well, and gravity has the same effect

As Carol says, gravity causes water to run from a higher level to a lower one.
