Lamb Kofta in a light tomato curry sauce
Ingredients for the Kofta/Kebab/Meatballs
*500g of minced lean lamb (ground meat)
*4 medium sprigs of spring onions
* 6 sprig of fresh coriander, chopped
*½ a medium onion finely diced
*1 tablespoon of mixed ginger and garlic paste
*1 medium egg
* 3 tablespoons of bread crumbs
*Salt to taste
*1 teaspoon red chilli powder
* 1 teaspoon of turmeric powder
*1 ½ teaspoons of mixed cumin and coriander powder
*1 teaspoon cashew nut powder
*1 teaspoon almond nut powder
*2 fresh green chillies, finely chopped
Ingredients for the tomato curry/chutney base:
*8-10 medium very ripe Roma tomatoes, grated
*1 grated onion
*2 green chillies slit lengthwise (optional)
*2-3 teaspoons of red chilli powder
*2 teaspoon turmeric powder
*Salt to taste
*A 5cm whole cinnamon stick
*Canola oil (I use the Kofta oil from the oven tray)
*1 medium sprig of curry leaves
*4 whole garlic cloves, peeled
*3 sprig of freshly cut coriander for garnishing and a sprinkle of Garum Masala
Method for the Kofta:
*Combine mince with all ingredients listed above
*Mix the ingredients well to ensure even distribution.
*Shape into golf sized balls.
*Place in an Canola oiled oven tray
*Bake in 200 degree oven for 30 minutes turning once. Set aside.
Method for tomato chutney/sauce:
*Heat the Canola oil in a pot.
*Add ½ the grated onion, cinnamon stick, chilli, curry leaves and garlic
*Allow to sauté till the onions turn transparent. Turn the heat to medium
*Stir in the chilli powder and turmeric powder and cook for 1 minute
*Add the tomatoes and salt and stir
*Simmer and cook the chutney until the tomatoes have melted, the water evaporated and the oil separates (15-20 minutes)
*Stir in the baked Kofta and garnish with coriander.
Serve on a bed of rice or with hot rotis. (It’s a blistering 27 degrees here so I am in no mood to toil over the heat of a stovetop and make rotis today.
