YUCK, I have always detested skin on milk. But that is a good question, is it because many people drink low fat milk these days, as we do?

Homogenised milk I expect.... You could try duchy organic milk which isn't

We use full fat milk but still don't get a skin on coffee. They must have changed something. Perhaps it helps when making four coffees. Think about it.

Tipin, I take it you boil the milk for your coffee to get the skin?

It's the homogenisation process as already stated, the cream no longer rises to the top to form the skin.
