Winter Vegetables

Following on from the Cauliflower Cheese post, I would like submit vegetables that are maybe not used so much these days. [don"t know what they are missing]

Cabbage Onions
Broccoli Garlic
Carrots Aubergine
Turnips Leeks
Cauliflower Brussels
Celeriac Parsnips
Swede Potatoes

These are all lovely vegetables and if cooked properly make good satisfying and filling food to warm the core on cold days.
Still suppose "Iceland" rules these days with quick ready to heat meals.
So be it .

Re: Winter Vegetables

Apart from Aubergine I use the others mostly for soups. Buttered Swede and Roast Parsnips are favourites to accompany roasts and are top on my list,

I am fortunate to have a Farm shop that I use for fresh seasonal veggies

Re: Winter Vegetables

We eat a huge variety of veggies, including those mentioned, some of the kids that come here have hardly any knowledge of having to peel a potato let alone tried any other vegetables.

I am always fascinated when they go home asking mum or dad can they have them at home and the parents have to admit they have no idea what yo do with them at all.
