Welsh Rarebit/Cheese on Toast

Is welsh rarebit the world's best cheese on toast or do you have a better version? Do you favour white or brown toast, and which cheese ?

My favourite take on this is well-cooked crumpets spread with Marmite, smothered in real butter, covered in a strong mature cheddar, sprinkled with sea salt and black pepper and grilled until the cheese is browning nicely!!!!
Probably not much good for the heart, but does wonders for the peace of mind!

My grandchildren love 'pizza toast'

I toast bread,
rub with garlic,
brush with a mixture of organic tomato paste and virgin olive oil,
sprinkle with grated cheese,
grill until golden.

That certainly looks good ... but to me cheese on toast is just that !...not at all exciting just bread and cheese ... no matter what bread or cheese ....sorry solo

Love cheese on toast I can't buy cathedral city any more it's completely addictive so I have to make do with strong tesco cheddar as there is some hope I can resist that and not eat the lot.
