Good shrubs for pots

Currently renting a house so although I've put stuff in the garden I am trying to garden largely in pots so I can take stuff with me more easily when I get my own place again.

Living in relatively mild southwest of Ireland, near sea, have ample south, east and west facing walls.

Would happily grow any fruit/veg suitable for pots, but also want some evergreen stuff and colour.

Suggestions?

I have Winter jasmine and roses growing in very large pots .....is your climate suitable for camellias? Evergreen, and stunning in flower.
