Meatloaf 101

Can someone tell me how to make the most delicious meatloaf in the world? OH loves it... I can't quite get the hang of it..

I only know the one my mother used to do and if I remember correctly it was just minced beef, some grated bread, an egg, chopped onion and all squished together and shaped then roasted. It tasted really nice from what I remember - I'm now tempted to make one!

Hmm, I haven't tried that Pats, might give that a go.

Meg's usually quite good for recipes so I shall be checking back to see what else could be added!

This is my recipe.

Equal quantities of minced beef and sausage meat (I sometimes buy thick sausages and remove the skin), about half chopped onion, seasoning, and crumble in a beef oxo cube, some beaten egg to bind. Pat into an oblong shape, put in a large roasting tin.

And the secret ingredient. Sprinkle dry stuffing mix all over the top, as thick as you like. Roast, with potatoes and other root veg of your chouce.

Every now and then check the dry mix doesn't burn and spoon off excess liquid, basting all veg.

I adore this meal and should have included this in my list of fave food!

I sometimes add onion powder too, but personally don't put in tomato puree.

Jazzi is right, sausage meat is a great addition, but I tend to use 2 parts beef to one part sausage...
