Healthy Recipes that taste good.

I will start today with foods to avoid and add one recipe every day. If anyone has others to add please do.

Beef
brisket
liver
other fatty cuts
rib steaks
Poultry
chicken wings and legs
duck
goose
Pork
honey baked ham
Veal
breast
Cheese
Brie
Edam
non reduced fat
Vegetables
potatoes white
Fruits
avoid all fruit juices for a time and then add back in sm. amounts
Starches
bread except 100% whole wheat and rye
rice
pasta
pastry
Dairy
whole milk
ice cream

Apple Walnut Chicken Salad

5 ounces of cooked chicken breast cut into 1/2" to 1/4" chunks
1/2 cup of chopped celery
1/2 cup of chopped apple
2 ounces chopped walnuts
1 tablespoon raisins
1/2 cup low sugar Italian Dressing
bibb lettuce

Mix ingredients and then add dressing. Easy recipe

That looks good Joan, . . It's similar to a Waldorf aint it.

somewhat but in the Waldorf I make, I use bananas and a honey dressing.

You will like my recipe for tomorrow.

Well it's Friday where you are anyway and thought I would post another recipe, you might enjoy

Pan Roasted Steak and Onions

1 tablespoon of extra virgin olive oil
2 tablespoons of balsamic vinegar
1 tablespoon Dijon mustard
1 tablespoon of Worcestershire sauce
2 cloves of garlic minced
1 lb flank steak
1 tablespoon cracked black pepper
1/2 teaspoon salt
1 cup fat free chicken broth ( yes chicken broth)
1 med. onion cut into 1/2" rings

In a large nonaluminium baking dish combine the oil, vinegar, worcestershire sauce, mustard and garlic. Cover and put in ref. for 30 min to overnight turning once.

Coat a non stick skillet with cooking spray. Place over medium-high heat. Sprinkle the steak with the pepper and salt. Brown for 2 minutes per side. Add 1/2 cup of the broth: cook for 5-6 minutes per side for medium rare. Remove the steak from the skillet, cover the steak loosely to keep it warm. Reduce the heat to medium . Add the onion slices to the skillet and cook until golden brown about 4-5 minutes. Add the remaining broth as needed to prevent the onions from sticking. Thinly slice the steak across the grain and serve with the onions.

I have a recipe for a hamburger (if allowed), tomato, macaroni dish:

One pound of ground beef
One can tomato juice
One onion
One tomato
One green pepper
One red pepper
One clove garlic
One box elbow macaroni

Brown hamburger in skillet, add vegetables, stir and mix together, add tomato juice and heat thoroughly. Boil macaroni for 12 minutes or until cooked, drain and add to mixture. Ingredients can be reduced for servings desired. About 6servings.

It is hearty and can be served with a green salad or bread.

Sounds good, how large a can of tomato juice?? So glad you added a recipe.

Here's a simple healthy easy recipe, if you like the ingredients?

Roasted Egg Plant and Peppers

1 eggplant, peeled, halved and sliced.
2 red bell peppers cut into thick strips
1 onion sliced
1/4 cup extra vigin oil
fresh basil (optional)

Preheat the over to 350 degrees F. Place the egg plant and peppers in a non stick pan and drizzle oil over them. Bake for 20 minutes basting regularly

Arrange on a serving dish and garnish with fresh basil if you want to use.
