One of my favourite soups I make,every year and freeze it,I make some for my neighbour also,roasted butternut and red pepper soup,delicious with crusty bread,...on saying that,I don't enjoy the peeling of the butternut squash.

An easier way to cook squash so you don’t have to peel it is bake it in the oven. Once cooked scoop the inside out and make your soup. It’s FAR easier.
That squash skin IS very tough indeed.

I never peel it. Just chop it and the peppers up and bung in the oven with herbs/seasonings of choice and roast till beginning to caramelise then transfer to a pot, add stock, bring to the boil, simmer all everything is tender and then blitz with a hand blender

It does make a thicker soup so I use a lot of stock, but the roughage is good for you

I feed the seeds to the hens usually but sometimes roast them to snack on

Well no the hens are usually stuck in the slow cooker as roasting makes them too tough

Winter or summer marrows and squshes all seem tasteless to me and not worth the effort of cooking.
