Oh Patsy ... now you've got me going talking about roast tatties.
I could just eat some.
Like me mum used to cook .. in beef dripping.

Olive oil mostly and occasionally duck fat in the winter for roast potatoes.

Olive oil is not supposed to be used for roasting because of the low smoking point but I never have a problem and make the crispiest roast potatoes ever it is all down to the variety of potatoes and the method used for cooking .

Me too, Olive Oil. I try to use goose fat at Christmas though.

I mostly use olive oil and sometimes coconut oil when I can get it, although it does tend to be expensive here. I also keep sunflower oil in.

When I used to eat potatoes (and I loved potatoes cooked any way) I tried doing roasties without any fat ... saw it on a TV programme.

Par-boil, score them witn a fork, so they have 'tram lines' and then cook on a roasting tray, as usual.
They will colour on the outside and be kind if crispy.







I only use fat in the form of spread and will use a small amount when I make sandwiches. A small tub of Flora will last over a month .... under normal circumstances that is .. nuff said

We render down the lard from our own pigs, but for roast tatties, I think there's little to beat goose fat. When we cook goose, we save the fat, but you can buy it in most supermarkets.

Ooo I love me tatties too
I'm going back to the lard - did no harm to the oldies before us, so will give it a try again, been a long time, but I liked it then, so should be OK now ................
