Pasta Sauce via Delia!

My first attempt from Delia's book



Surprisingly sweet - I prob did something wrong lol

Ingredients:
Skinned tomatoes (1.1kg) (fresh not tinned)
Onion
Garlic clove
Fresh Basil leaves
Olive oil
Salt/pepper

Cook onions and garlic for 5-6 mins, add everything else and simmer on low heat uncovered for 1 and half hours.

Woo hoo, lookin' good, Azz! Am I having a senior moment, I thought pasta was a no-no for you?

If it was too sweet you could add some dried hot pepper flakes toward the end of the simmering, or a bit of chili puree.

That looks lovely Azz.
If you found it too sweet that may be because you cooked the onions till they started to caramelise (the dark bits on the left?) If you'd prefer it not so sweet just cook the onions less.


Do you allow yourself olives? There's a lovely recipe which translates as 'Whore's Spaghetti', using tomato, onion, capers and olives ... I'll ask Dr Google

DM - the dark bit on the left is the basil leaves the onions were only lightly browned, but guess they caramelised on the simmer? (didn't go dark brown tho). Yes Olives are in - love them
