Thank you Ginny darlin' - am a gormand, so am looking forward to my Sunday 'roast'. I bought a nice piece of pork on Friday, together with a large bottle of cider. Pork and cider have been quietly cooking away in my slow cooker overnight (the smell wafting in from my kitchen is fabulous!!!). Later on I'll strip the skin off the joint, score and rub with salt and place in a roasting tin with potatoes, parsnips, carrots and onions. Voila pork crackling - LUVERLY!!!!

Sorry Ginny darlin' - too late - the crackling was fabulous!!! so much so, there's now none left - when I came to carve the joint, it was so tender that it just fell apart. I managed to carve three large chunks from it (the remainder of the joint is now in my freezer) until I return from foreign parts. The pork was delicious. I made the gravy from the cider/meat juices and that to went down very well.
